Something sweet

  • Crust:
    400 g all-purpose flour
    100 g sugar
    ½ baking powser
    200 – 250 g butter
    a bit of a milk, cream, whey or Tatra

    Filling:
    apples, pears, apricots, jam,…

    For crust:

    In a bowl combine flour, baking powder, and sugar. Add butter. If dough is too dry add some milk. Make a tougher dough.

    For filling:

    Peel and dice the fruits. Stew them with a bit of a water, sugar, cinnamon and a lemon juice. Let it cool down.

    Divide dough into 2 pieces - roll bigger piece out and place it into a cake pan. Spread the filling on it. Roll out second dough piece. Cut it into strips.  Form lattice. Bake in a preheated oven for 20-30 minutes at 180 - 200°C. After cooling down dust pie with a powdered sugar.

    This amount of ingredients is enough for a round cake pan, for big baking tray double the amount of ingredients.

  • 6 dl all-purpose flour
    3 dl sugar
    150 g butter
    ½ baking powder
    ½ teaspoon of turmeric

    ¼ l milk
    fruits – currants, apricots, raspberries, rhubarb,…

    In a bowl combine flour, sugar and butter. Divide dough into 2 pieces - smaller piece for the streusel. Add baking powder and turmeric into bigger dough piece. Mix it all and only afterwards add milk. Grease baking tray and dust it with semolina. Pour pie butter into the baking tray. Spread the filling. Sprinkle streusel over filling and bake at 180 - 200°C in preheated oven for 20-30 minutes.

  • 500 g grated carrots
    150 g sugar

    1 – 2​​​​​ cardamom seeds
    1,5 l milk
    bit of raisins
    ghee

    First of all boil milk. In higher skillet roast carrots with a bit of ghee. Add boiling milk and sugar. Stir until halwa turns thick. After all add grounded cardamom seeds and raisins.

  • 5 dl semolina
    1 l milk or water
    200 – 250 g butter
    3 – 4 dl sugar
    2 bananas or 1 dl raisins or finely chopped nuts

    In a skillet melt ghee and add semolina. Stir until semolina gets brown (20-30 minutes). Mash banana and add it into semolina. Afterwards carefully add milk. It is better to add warm milk with melted sugar. Stir continuously until halwa turns to a thick pudding consistency and doesn't stick to the skillet. Instead of banana you can use chopped pineapple, apricots or apples.

  • 120 g butter
    125 g powdered milk

    115 g powdered sugar

    Flavours:
    carob
    mashed bananas, dates, grounded nuts, almonds or coconuts
    vanilla

    Mix all ingredients, form balls and chill. If necessary add more milk or sugar. When using mashed bananas add more milk powder.

  • 3 l yogurt
    lemon peel powder
    2 dl sugar

    Pour yogurt into a muslin cheese cloth or a kitchen cotton towel, tie the edges and hung the muslin on a hook for 10 hours. Add lemon peel and a sugar. Mix it well. You can also add fresh strawberries or blueberries.

  • 1 dl rice
    4 dl milk
    1 dl sugar

    Add sugar into milk and boil it. Add rice and cook on a low heat until half of a milk gets evaporated. At the begging stir only sometimes but when pudding turns thick stir continuously so that milk won't get burnt. Serve chilled. You can also add vanilla, rose water, saffron, cardamom, nuts or raisins for a flavour.
